Do you just use them as they are or still put paper cases in? I will have a look for some and have a go at this.

I use silicon without paper cases but I guess they might travel better in a paper case?

I also use silicone without paper cases.  I then remove the muffins and wrap individually in cling film.

These sound amazing and like they will curb my carb cravings whilst being low carb! Am definitely going to try a version with a pregnancy friendly cheese :)

Btw is feta pregnancy friendly? Suppose it depends whether the milk is unpasteurised...

Isn't most commercially produced cheese now made from pasteurised? - I thought they had to tell you in big letters if it wasn't?

I don't know what Patti thinks, but I think yes off the top of my head.  About the same 'constituency' as we say round our house.

Deb I think it depends on the type of Creme Fraiche.  We usually buy "Tesco finest" which is exceedingly thick, much thicker than any kind of cream and that wouldn't work, but I bought some Creme Fraiche in Lidl which was quite sloppy and I think that would work.  Or... what I might do as a fix, is whisk (very vigorously with a hand whisk or easily with an electric one) the very thick creme fraiche with a bit of water in order to attain a "yoghourt like" texture.

oh wow, they look good.  Im going to pick up some ingredients tonight and try this out.  I didnt think i would be able to have anything that looked remotely like a muffin!

Well i bought the greek yoghurt and the feta cheese, forgot almonds (or ground almond - can you buy this or do you grind it yourself?).  So, i looked in the cupboard and saw a packet of milled flaxseed I bought to add more fibre to my diet.  I tried it instead of the ground almonds in your recipe and it hass worked ok.  They look rather too healthy being brown, but smell lovely (feta and oregano).  Taste is ok.  I could probably only eat half a muffin at a time (which is no bad thing).  I have to say the pictures look a lot tastier than my ones!  Ill definitely try them again with the proper recipe.

Made some cheddar and tomato ones using the creme fraiche (have some in for a chicken recipe that needs using) and its worked! My first foray into low carb baking, am now looking at sweet cake recipes to try. I've always avoided sweetener, am I the opinion that chemical anything is bad and I'd rather eat less full fat, full sugar things but if it helps keep my sugars stable and allows me to eat sweet things during the pregnancy I'm in :)

I think I've uploaded a pic but it the first time I've tried...
