That sounds yummy!

I see everyone's having great fun with adapting this recipe, which is great.

I'm not sure what I shall do next, possibly feta.... we'll see.

You could use strong cheddar

Tried this recipe with 50g grated strong cheddar, 10g parmesan plus plenty of white and black pepper.

Result - savoury cheese muffins that disappear at will (or rather my lack of it !). Must make a bigger batch.

Went to my local Aldi yesterday and found their ground almonds, 99p for 200g is a bargain. Half the price of Tesco and Asda. Going to try and make a low carb muffin version of McVities Jamaican ginger cake.

There is a ginger cake in the recipe section; however it isn't 'sticky' becaue there's no golden syrup in it.  Now if you can find a way of getting the sticky in it without the associated carbs Terry, I'll be shoving Poppet AND you aside to get to it .... I've made the one on here and well .... noy all that keen TBH.  It's just not the same!

No it's not the same Sedge... but I fail to see how you can get the stickyness into a ginger cake without using either dark brown demerara or treacle.  So I'll be queuing up with you if Terry can achieve that.

First attempt produced some edible muffins but just not McVities.

Need to darken the mixture so I will experiment with just enough black treacle to keep the carbs per muffin down to 2g. Perhaps add some cocoa powder as well.

Remember it has quite a 'tang' Terry, not sure that artificial sweetener will counteract that?  and you may need a bit more baking poder, it will be a heavier mixture?

Are you happy with the actual flavour?

I put in 25g of ginger (for 12 muffins) but it needs more. Only thinking about 1 teaspoon of treacle so it shouldn't overpower the rest.

I'd better buy some more baking powder - mine is five years past its best by date !

Just the Schwarz refill packs of ginger. Might try some finely chopped ginger root as well.

Surely black treacle is very sweet?? If this is one of those things I just didn't know then that'd be great but surely it's just another type of sugar?

Man, I used to love those ginger cakes....but I dont see any way of getting that gooey stickiness.

Mmmmmm - sugar is 99.9, demerara no different to white - T&L's Golden Syrup is 80.5, T&L's black Treacle is 64, Molasses is 56.

You would need a lot less treacle than you would sugar.  BUT it isn't as sweet!  1 tabs is 15mls so that's only 10g CHO in the whole bang shoot.
