Celery and Celeriac Soup

My cream of celery soup recipe is on the old forum i think, but went something like this:


Celery, Potato, Leeks, Stock, Seasoning, Cream.


I have no potato in, but i have celeriac, reduced price and in need of using today... Think it'd work instead? It's celery soup ... and celeriac is celery root.... so will give it a go later. Celeriac is also lower carb than potatos i think!


See how it goes.....

mmm not for me tried celeriac and didnt like it.

now on metformin 500mg 2 tabs @ 8am and 2 tabs at 5pm gliclazide 80mg x2, aspirin 75mg x1,  ramipril2.5mg x 1

We had your lovely celery soup again today Lucy. I have a large container of it in the fridge too, I made four heads of celery! How did the celeriac go??
T2 and PCOS. Just had large serous adenofibroma removed with ovary and fallopian tube. Bp is now normal!

Novorapid, levemir, trulicity, metformin.

Was great! Celery is 50p a bunch in tesco atm, which is why i remembered it.

I used 2 bunches of celery, 2 leeks, 1 small celeriac, some marg (butter ideally), and some stock, salt and pepper. I don't eat cream so i didnt use any.

I didn't use enormous quantities of water, turned out deliciously thick and tasty. Made about 3 normal sized bowls. (Had one tonight, and put the rest in a giant sized bowl to go in the fridge when it's cooled.)

Guess what i'm having for breakfast!

Had an email from River Cottage with a celeriac soup recipe -

I omitted the potato and substituted a wilting red capsicum and a drying out chili plus a little root ginger.
Didn't bother with the pesto topping.

Lovely stuff at about 5g carbs per portion (my guesstimate).
Type 2 since 1999. Current meds Gliclazide
HbA1c Feb10 10.9, May10 7.7, Oct10 6.6, Oct11 6.7, Dec12 6.4, Nov13 6.9

It does sound very nice.  I notice that you and every single person who commented on it had changed the recipe - made me laugh!  I belong to the Good Food Magazine website and there are lots of comments from people under the recipes.  On one occasion one of the women had removed just about everything from the recipe that gave it it's nature and had substituted other things so in essence it wasn't the same recipe at all!   She then gave it 5 stars.  One of the editors commented that they'd be obliged if people wouldn't give things stars if they'd changed the recipe - it just tickles me.

FWIW I'd probably leave out the potato too.  I notice that whenever you see a recipe for celeriac, even if it's just celeriac mash, the recipes always add a potato.

I find these recipes so helpful to dip into and pull something up I haven't made in awhile. Celery soup tomorrow then!

I haven't tried celeriac in a soup but we cooked and mashed it with half and half of swede.  It was delicious.   :)
