Have split this off from Stilton and Tomato muffin thread as it's a completely new recipe and deserves a thread of it's own.  Patti

Still experimenting with sweet muffins.

Made these savoury ones this morning, ideal for a picnic but you would have to make them the same morning as they won't last overnight (they don't go off, they just disappear)

Quiche Lorraine Muffins
For 6 muffins (carbs)

45g plain thick yoghourt  (2.9)
45g softened butter       (0.0)
45g 90g ground almonds        (2.6(6.2)  (Tesco's packet says 6.9g per 100g)
45g grated strong cheddar (0.1)
Plus a little grated cheese for topping
2 x medium eggs           (0.1)
20g finely chopped crispy
streaky bacon             (0.1)
A finely chopped shallot  (0.3)
A couple of pinches of salt
A few shakes of white pepper
A few grinds of black pepper
2 x rounded teaspoons of
baking powder or 10g         (0.5)

Bake on the middle shelf at Gas Mark 5 for 25 minutes  (375 F / 190 C)
Reduce the time if you have a fan oven

Total carbs 6.6 10.2 so only 1.1g  1.7g per muffin
Type 2 since 1999. Current meds Gliclazide
HbA1c Feb10 10.9, May10 7.7, Oct10 6.6, Oct11 6.7, Dec12 6.4, Nov13 6.9

How many does it make?  It doesn't seem like a lot of ground almonds.  They sound absolutely yummy, must give them a go!

Sound yummy  :D will definately make these many thanks for posting this recipe.  I was planning on trying to make a muffin with bacon in after baking the stilton and tom ones but so glad someone else came up with this one. 

Diagnosed:
familial hyperlipidaemia & angina - 1995
type 2 diabetes - 2005

Meds:
40mg pravastatin & 75mg aspirin
various cardiovascular medication
2 x 500mg metformin (reduced from 4 x 500mg in May 2011)

HbA1C:
'06 - 6.9; '07 - 7.6; '09 - 6.7; '10 - 6.0; '11 - 5.8; '12 - 6.2; Nov 2012 5.9

You spotted my deliberate mistake - should be 90g ground almonds.

So that makes it 1.5g carbs per muffin

Oh thanks for the update re ground almonds, just amended my written copy - got it all ready to try this week lol  :D

Please could the recipe be changed to include the corrected amount of ground almonds ? Otherwise I will mess it up.

I've altered it in italics.  Collins Gem says Grd Al are 7g per 100g, packet says 6.9 so have taken what it says on the packet.

Anyway it's still very little!

The savoury muffins have always gone down well at the meets!  Sedge did some great Stilton and pear ones this year.

Well I would certainly remove the core and chop them into approximately 1cm dice.  Whether you also peel them is a personal preference.
