There is no method in the muffin recipe please help thanks. Just got 1kg of ground almonds from amazon £11 thought this was a good price

Made these quiche muffins today, AMAZING!!!

Only thing is OH tried one & I'm having trouble stopping him just devouring them all in one go, does anyone know how to translate the ground almonds back into flour? I know we're usually doing that in reverse but if I can make some for him with flour it will be quite a bit cheaper.  ;)

I think I'd experiment using any ordinary muffin mixture and add savoury ingredients, but remember they won't be the same, cos ground almonds do give a denser, slightly wetter texture.

That's my dilemma, he loves the 'wet' texture of the ground almond muffins so I'm happy to put in the same amount of yoghurt etc but don't know if I can sub the 90g ground almonds for 90g flour?

Q, I am also a bit of a perfectionist and that's the reason I am willing to experiment.  I've adapted loads of recipes to low carb, some haven't worked particularly well so I've ditched em, but if I weren't willing to try I'd not have been able to perfect the ones that do.  Sometimes you do it and realise it only needs a small tweak to get it right.

Okay, tried it today with 125g plain flour. Had to up the Greek Yog to 5tbsp as the mix seemed a bit dry, also added 2 tbsp grated parmesan to the cheddar as that's what I put in the g.almond ones.

OH said he quite likes them but could be cheesier >gulp< will try 4 tbsp of parmesan next time.

I had to taste a tiny bit of one to compare & guess what? Yep the ground almond ones are better!  :) :) :)

Ahhhh so what to do?  Make OH his own ones with more cheddar, or let him eat the ground almond ones (and double the quantity at the same time)?

Can't let him eat the ground almond ones, he's more than capable of eating 6 (or more) in one go & the price of ground almonds has just doubled  :(  I'lll just up the parmesan in the flour ones  ;)
