Sticky sausages with Mediterranean Veg

I'm sure I've posted this before but I couldn't find it, so here goes again:
 STICKY SAUSAGES WITH MEDITERRANEAN VEG         

Serves 2
1 pack Lidl “Nurnburger sausages” the little white ones about the size of a finger – 17 to the pack
2 Red Onions peeled and cut into quarters
6 – 8 cherry tomatoes
Approx 2 – 3 tbs Olive oil
A good splash of balsamic vinegar
Approx 8 1cm slices Chevre Goat’s cheese or about half a pack of Feta.
A good handful of fresh basil leaves
 
Plus a selection of the following, depending on what you have in the fridge
2 red peppers de-seeded and cut into chunks
3 or 4 mushrooms halved
1 courgette cut into chunks
Several Asparagus spears
Some cooked new potatoes
Green beans
 
Find a shallow baking tray and add the olive oil.  Place the sausages randomly on the tray together with whatever vegetables you have decided on.  Toss in the olive oil and place in a medium hot oven (gas 5) for about 10 – 15 mins.  Check the sausages, turn as necessary and also turn the veggies.  Cook another 4 minutes.  Add the cherry tomatoes and the cheese.  Spoon over the balsamic vinegar and put back into the oven for another 5 – 10 mins.
 
Serve the sausages and veggies onto hot plates, run a fish slice around the baking tray to combine the oil, balsamic and melted cheese and pour over the sausages and veggies.  Top with a handful of fresh basil leaves.  Enjoy!
 
Carbs will depend on the veggies used but there’s only 3g carb in the whole sausage pack.
 
Tonight I only used the red onions/mushrooms and red peppers… still yummy!

Hi Patti - looks good. There was a similar looking recipe in Good Housekeeping this month, but think yours looks nicer :)

Made this again last night, with the fatter brakwurst sausages. still delicious and mashed celeriac...Must admit, my ddwho only likes Walls sausages says this is the best!!

 :)  It's dead easy too isn't it?  It's one of the few meals I don't mind cooking from scratch on a work night.

This looks lovely and something my husband would actually eat. Like the idea of mashed celeriac too, he feels hard done by unless there's potato with sausages but I could have the celeriac. As soon as I have the energy to cook again I'll try it :)

 :)   We had it last week when I had to do the shopping after I finished my volunteer stint at 4.30 so it was dead easy and quick once I'd done 2 supermarkets and unpacked/put away the shopping.  Hubby loves it.

Oh, right now Lidl have on offer Balsamic Vinegar with fig, pear or apple.  The fig version is "andsome" (as the Cornish say) in this dish.

We're having salt and pepper squid.  With salad... and I have picked a day in August, which if you didn't know it was August you'd think it was November.  Cold and raining and not the night for salad!

I am glad you like it Poppet.  I still do it fairly often and was only telling my hairdresser about it today.  She loved the sound of it and said she'd do it.

The balsamic combines with the oil, the juices from the tomatoes and the melted cheese to make the sticky sauce!
