Bread using almond butter
« on: 06 August 2012, 11:43:31 AM »
Saw a lovely recipe at the weekend for bread with pumpkin seeds which was made using 'almond butter' as in peanut butter.  I have never seen this in the shops, but imagine I could make it using a food processor and some almonds.  Anyone made their own nut butter before?

If I can get it to work I can post the recipe!

Holland and Barrett sometimes have almond butter in stock -

http://www.hollandandbarrett.com/pages/product_detail.asp?PID=2644&CPID=3040

It's a bit expensive but at least you can try it before buying in bulk.

I would have thought peanut butter would do the job just as well although the carb content is a bit higher.

Patti - will post the recipe tonight, but from memory it was just almond butter, egg whites, sunflower seeds and ... butter maybe?  Can't recall.

Incidentally, nipped into Sainsburys at lunchtime and they had almond butter right beside the peanut butter, along with cashew butter.  Who knew?  Anyway, I bought a small tub (quite expensive at £2.49 for 170g) which is enough for the recipe.  I will try making the bread and if it is good can then experiment making my own almond butter...

I buy Meridian almond butter from health food shops - actually I get it online from Naturally Good Food as they give a discount when you buy six jars at a time and I get through two jars a week - I eat it by the spoonful for a bedtime snack: http://www.naturallygoodfood.co.uk/search.php?keyword=meridian+almond Sainsburys sell it too...it's very yummy :)

I liked the almond butter as an alternative to the peanut butter.

The bread was DISGUSTING and I won't post the recipe as a result!

I couldn't for the life of me think how you could make bread without flour or flour substitute Jenny (e.g. ground almonds)

It tastes very similar, Patti.

Well, the ground almonds is v similar to almond butter (just mushed up almonds!).  Anyway, sadly it didn't work!

How do you make the dip Anne?
This is my recipe:

In a blender whizz up:

1/4 cup water
1/2 jar Meridian almond butter
juice 1 small lemon
2 teaspoons tamari
1 teaspoon xylitol
1 - 2 tablespoons chopped onion
1 clove garlic
1 tablespoon grated fresh ginger
1/2 teaspoon cayenne pepper

I then adjust it with water to the thickness I like - the sauce can be used just like that but I and dh like it slightly warmed at which point it seems to go thicker. I would say those quantities are for two, depending on how much sauce you want......it's a bit of an experiment.

Sainsburys sell almond butter.

The local Sainsburys are at LEAST half an hours drive if not longer... but there are places I can buy things locally.

What is Tamari?

My recipe has Peanut butter, lime juice and coconut milk in it apart from the other ingredients e.g soy sauce

I wondered that too - apparently according to the Beeb it's

A type of Japanese soy sauce that's made without wheat and is therefore suitable for those with wheat allergies. Tamari is dark in colour and has a rich flavour, making it useful in marinades and dressings. If you can't find tamari, substitute dark soy sauce.
