What is Tamari?
It's a Japanese soya sauce - it tastes better than 'regular soy sauce imho - you can get it in Sainsburys ! Or from most health food shops. We haven't got a Sainsburys near by but I always get my shopping online from them.

I wonder if you can simply substitue almond butter for the peanut butter straight in your recipe Patti ? The coconut milk and lime would go nicely I'm sure....in fact come to think about it I have seen a recipe for sate sauce using almond butter and coconut milk....just remembered it's in a Mark Sisson book I have...here it is:

1/2 cut almond butter
1/4 cup coconut milk
1/4 cup water
1 glove garlic
2 teaspoons ginger, minced
1 teaspoon tamari
3 teaspoons seseame oil
1 1/2 tablespoons fish sauce (not sure what he means there, I think it's a Chinese or Indonesian thing)

He just processes all those ingredients in a blender/food processor. No cooking needed !

Fish sauce is used a lot in the far East.  I first became acquainted with it in Thailand.  It smells positively VILE, but actually it does enhance the flavour of dishes really well and once it's in the dish you don't smell it.

Am off to town shortly to have lunch with a g/f - will pick up Almond butter in Holland and Barret.  I can always use dark soy for Tamari.

I never managed to get back into the town centre after lunch with my g/f until the shops were closed, so today have made the dip with peanut butter, and it tastes just as I remember having it in Singapore many times.  Hope the chicken will be OK, since it's been marinating since Thurs night.  We were meant to have it last night, but I got sidetracked and we had a very naughty pizza instead.

Bought some almond butter to try the recipe probably will not make it now but am keen to try the almond butter, as although I enjoy peanut butter in the muffins I do not like it on its own.  Was interested to hear Avocado you use it as a bedtime snack will try that many thanks for the tip.

familial hyperlipidaemia & angina - 1995
type 2 diabetes - 2005

Meds:
40mg pravastatin & 75mg aspirin
various cardiovascular medication
2 x 500mg metformin (reduced from 4 x 500mg in May 2011)

HbA1C:
'06 - 6.9; '07 - 7.6; '09 - 6.7; '10 - 6.0; '11 - 5.8; '12 - 6.2; Nov 2012 5.9
