Bacon, broccoli and turnip soup
« on: 15 September 2012, 04:42:03 PM »
Just made this soup and it's yummy. It's actually supposed to be made with celariac but it's out if season do I used turnip and added celery for flavour. Heres's the recipe:

6 rashers smoked bacon
1 largish onion (mine weighed 170g once chopped)
1 small celariac or 3 small turnips (I used turnips and they weighed 365g when chopped)
1 medium sized broccoli (mine weighed 220g) cut into small florets
1 litre stock (I used homemade chucked stick but cubes is fine and so is vegetable stock)
1 bay lead
1 tsp thyme finely chopped
1 tsp rosemary finely chopped
100g baby leaf spinach
1 stick of celery chopped (if using turnips)

- Fry the bacon till crispy then set aside
- soften the onions and celery (don't brown)
- Add the celeriac / turnips and broccoli and cook for 5 mins on a medium heat
- add the bacon, stick and herbs back to the pan and bring to the boil
- cover and simmer for 15 to 29 mins
- remove from the heat and add the spinach
- blend till smooth and season to taste

I also added Crete fraiche because I like
creamy soups but the recipe doesn't call for it

I got 6 portions from it at 5g each and it was lovely, nice and thick but still low carb

Sounds yummy Debs.  I have a celeriac sitting in my fridge right now..... hmmm... no spinach or broccoli though.... might nip out and get some tomorrow.

What the heck does chucked stick mean?  I assume just like the other stick and the fraiche Greek island it's a typo, but I can fully interpret the second two ! LOL

I can of course do the second word but the chucked is throwing me off the scent.  Or possibly, the flavour I suppose !

Good ole predictive txt !

Ukrainian delicacy, I think.

Yesterday - I could hardly type 2 words without making a typo.  Hope today will be better! (cos I can usually manage at least 3)

Oh dear that has to be the winner for most number of typos in one post! Really random ones too! Sorry I was in a rush as we were going out :)

Chucked stick is indeed chicken stock

Crete fraiche is creme fraiche

Stick is of course just stock

Did I get them all!

We also have a chucked in the oven.  Halogen oven we have bought for MIL as a birthday pressie for her 88th that I need to be able to show her how to use - I already realise it is a "mistake of the first order" and expect we will end up with it!  Plus buying her a huge box of chocs which seem to be the only pressie she really appreciates.

No Bay Lead in it, but plenty of thyme, rosemary, garlic and butter under the little ones skin!

See, it's catching - Pete's doing a typo too!

Our chucked was a bit tough TBH - however the cauli cheese and everything else were nice and so was the nectarine we had for pudding.  (well we had one each LOL)

Unfortunately they hadn't got any white ones on Tues in Auchan at maiens, or even Amiens which was the shop I went in LOL - so we bought jaune.  They were as hard as bullets so I stuck em straight in the fridge and only put them out in the air in the fruit bowl when we got home.

been turning em slightly every day and at alst, 2 of them were soft enough to start on.
