Hi guys, just wanted to share the experimenting I have been doing with pancakes. Of course you can have them any time of the day not just for breakfast, but I know people struggle with anything low carb other than eggs for breakfast, and even though I absolutely love eggs, even I am getting bored. These are really quick too and you can have them sweet or savoury and very adaptable. With pancake day coming up thought it might help some people resist!
Low carb pancakes.
1 1/2 tbsp Flax meal.
1 1/2 tbsp almond flour.
1 tsp baking flour.
bit of cream or milk to get the right batter consistency.
Sweet additions optional:
splenda (or any equivalent) to taste
chopped nuts (I added crushed hazelnuts to mine)
Serve with fresh berries and cream. maybe some sf syrup if you have any, would be lovely (reminds me I must get some, miss maple syrup).
Seeds. (I have a pot of savoury mixed seeds from sainsburys that worked well)
Anything herbs or spices you fancy really.
I served mine with bacon and tomatoes.
Have read that some people cook them and use them like bread for a sandwiches.
I really enjoyed mine and like I said they are so adaptable and do not have the egginess that most substitutes have.
