Low Carb breakfast delight!

After searching the net for low carb breakfast ideas, and only coming across fried or egg based dishes, I finally came across this one which suits me down to the ground. having tried eating eggs and the like and not really enjoying it for breakkie, I found this recipe much more to my taste.....

Take 1 tub of cottage cheese ( for protein) , 1 cup and a half of low fat vanilla yogurt. blend until smooth.

Take one sundae glass (in my case I used a tumbler!) layer it with firstly 3-4 tablesp. of the yogurt/cheese mixture
then sprinkle on some sf granola, (about a tbsp) add a few pieces of fruit, (frozen berries is which I used) chopped strawberries, kiwi, etc, about 6-7 small chopped pieces,  then sprinkle a few chopped nuts, then layer it all over again until the glass is full.

30g carbs per serving.
T1. Dx 24/11/10. Lantus/Humalog: Thyroxine 100mcg, Atorvastatin 10mg, aspirin 75mg,  Hba1c on dx. 11.5,  7.7, 7.0, 7.2

I agree, this sounds delicious and would be ideal for someone like me. Although I was under the impression that granola is a little on the naughty side, is this correct?

I am far from complaining by the way and thank you for posting this!

Type II - Diagnosed around 2004
Currently Metformin 2000mg a day (taken day and night) and 3 x Gliclazide throughout the day

Well it contains carb, but SF means "sugar free" so you'd just have the carb from the oats, and 1 tbsp isn't all that much.

There is carb (not a ton, but some) in cottage cheese, and yogurt (even the sugar-free ones cause it's the carb from the milk) and of course the fruit.  But overall carb content matters too and 30g is a lot for breakfast by some people's standards, but not for others and on the whole it isn't excessive (check the label on a box of breakfast cereal or a pack of bagels sometime...)  Plus there is loads of protein in the cheese and yogurt which will slow down digestion and prevent spikes :)

Bet you never knew being diabetic meant you were gonna become a nutritionist too! ;)

I've done a few days trial on this breakfast with regards to BG's,   this morning my Fasting bg was 7.0  and I had 3u of insulin ate this breakfast and an hour later it was 6.2, then at lunchtime it was still 6.2 !  same yesterday but  my FBG was a little lower, but no peaks and steady levels. I'm pleased!

I thought it was weird bearing in mind what WAS in your Sig, Sue!  Literally never occurred to me to look on the left!

What I meant was, carbs at brekkie are not quite so much of a prob for T1's usually  - but in any case it also sounds like dessert, to me!

Sounds delicious.

Unfortunately, for me, that is 25gms per serving too many :(
