So glad you liked them, the reason I left the sweetener in is because I read somewhere that a little bit of sweetener helps with flavour, but your all probably right, they will be fine without it, and if it reduces carbs then all the better :)

Next time I make some I'll add a little bit of sweetener and see how they taste.

Well, tried them without the sweetener & they're still very nice but I think they were even better with! It does seem to enhance the flavour & as I'm using liquid Splenda with zero carbs I think I'll carry on. Yum  :)

Doesn't really surprise me. A lot of 'normal' bread types have a sweetness too them.

I've altered the cheese muffins again slightly, I said I'd added 3 x tbsp Greek yog to make them more moist. Well now I've subbed 2 of those tbsp for pesto & they are delicious.  ;D

The original savoury muffin recipe (http://diabetes-support.org.uk/diabetesforum/index.php/topic,1304.0.html) did have yoghurt in it but substituting pesto seems like a nice idea.  Which flavour of Pesto did you use.  I mean these days you can get all sorts of different flavoured jars of pesto.

It just calls itself Belazu Italian Basil Pesto so I suppose it's just the original flavour. It really goes well with the mature cheddar. I'm going to try parmesan next  :)

Ah, it's the original pesto then.  These days you can buy tomato, Aubergine and various others.

When I did the basil, sun dried toms, & parmesan muffins I just finely chopped some fresh basil.  I'll try pesto and see how it compares.

I like the way the oil in the pesto adds to the moistness. I did try subbing coconut oil for the yog once but it made me feel a bit sick, guess I used too much  :P
