I've been experimenting with my bread machine and want to share this recipe with you. I have adapted it from a few that I found on the internet. This is the closest I have come to "real" bread. The only difference I can tell is its slight chewiness. Apart from that its lovely.
1tsp dried yeast
1tsp baking powder
1tsp xanthan/guar gum
50g linseed/flax meal
50g ground almonds
75g coconut flour
200g vital wheat gluten
3 tbsp olive oil
320 ml luke warm water
Place water, sugar and oil in the bread machine pan. Mix dry ingredients in a bowl (excluding yeast). Put mix in bread machine pan. make a well in centre and put yeast in. Bake on wholemeal programme (about 4 hours).
I know different machines have different methods, so adjust to your model if you need too.
You can mix up the almonds, coconut and flax amounts if you wish. Coconut flour is higher in carbs so you could adjust to a different ratio. Even soy flour could be used. The important ingredient is the vital wheat gluten, thats what makes it like real bread. Xanthan/guar gum is a bread improver, but can be omitted if you wish.
I worked it out for the above recipe to be around 50 carbs for the whole loaf, but if coconut is reduced or omitted then so will the carbs. I will try a loaf without it and let you know if its as nice.
Apparently the sugar is food for the yeast and gets used up in the process.
