Low Carb Cheese Crackers

Made these today, yummy, sorry to whoever originally wrote the recipe but I can't find the site to quote. Doh!!

Low Carb Parmesan Crackers.

225g Ground Almonds
150g Grated Parmesan
¼tsp Salt
½tsp Garlic flakes/powder
3-4 tbsp Water

Mix all the dry ingredients together & add water till you have a usable dough.
Roll out between sheets of greaseproof paper till 1/8" thick.
Cut into squares & bake on a sheet for 25 mins @ 180ºc
Keep an eye on them as they burn easy.
1.4g carb per cracker  :)

(I made a ½ qty as it looked like quite a lot, it made 16 crackers & in my oven they only took 14 mins).

Hmm not a fan of parmesan - will try with cheddar grated finely

My OH has always hated parmesan but has found out recently that he does quite like it if it's freshly grated. He liked these crackers  :)

Had some nice cheeses left over from Xmas & wanted to eat them with crackers so I made a batch of these but decided to add 1/2 tsp mustard powder, they were even yummier  :)

They do sound exceedingly yummy.  I never got round to making them, but I might now.

FWIW I made some parmesan, basil and sun-dried tomato muffins for a buffet do we had on 20 Nov.  Quite a few were left and I had put them in the freezer.  Had one this morning for breakfast with my boiled egg (and a slice of toast), had it warmed up and slathered in butter - it was really lovely.
