Courgette Cream Soup

I used to make cream of courgette soup with 3 courgettes & several potatoes cos I like thick soup. I'd been wondering how I could make it as thick without the pots & decided to just double the courgettes, it works!

Makes about 2½ pints of soup.

6 courgettes
1 onion finely chopped
1pt veg stock
double cream to taste
black pepper.

Fry the onion till soft, add the chopped courgettes & stock & cook till soft. Whizz in a blender till all the lumps are gone & add double cream (I use a lot) & black pepper to taste.

I've also made it with cauliflower/broccoli & butternut squash but I've not tried these versions without the potato yet, don't see why it wouldn't work with them also.
