Sponge cake

I made the strawberry sponge cake from here today, replacing the strawbs with raspberries as that's what  I had in

and I must say I was very pleasantly surprised. I know whatever you lash in whipped cream and fresh fruit is bound to taste nice but the sponge was pretty good, very moist and lovely texture and the easiest cake I have ever made! Five minutes to weigh out and mix the ingredients and three minutes in the microwave and you're done. No, it isn't like full sugar cake but for a low-carbing diabetic who is careful what they eat, like pretty much all of us on here, this is great for a treat.

You could add vanilla or almond essence to the mixture and I think adapted slightly would be a good base for different puddings.

Not sure how to add a photo on here, otherwise I would. I am not the world's best cake decorator but just wanted to give you an idea of what it looks like.

That looks interesting and very easy to make  :)   What did you put the cake in to cook it in the microwave?  What diameter and depth did it come out at?  I think somewhere I have a cake pan that is microwaveable but no use if it turns out like a pancake because the cake pan is the wrong diameter. ;)

Hi Patti, i used a pyrex jug to mix everything in and cooked it in a soup bowl. It came out about 3 inches high and 4 inches in diameter. I sliced it in half and put cream and raspberries in the middle as well as on the top. I cut it into quarters for 4 generous portions. 

As i said, I would have decorated it a bit more carefully had i known i would be sharing the photo, but it was surprisingly nice so I thought I would share.

It was for a birthday and so we also had a small cake from a bakery for non-D people. I had a small slither of the bakery cake and it was far too sweet for my liking, the layer of jam in the middle was awfully sickly. I know my tastes have changed (a year ago I would have had a big slice of the bakery cake) so I much preferred my cake but even those who don't have to watch their carbs thought the cake I made was nice.

That's exactly how I feel about bought in cakes!  Really not worth bothering with!

Made another 2 cakes this morning using this recipe this morning to take to a meeting/social thing. In one I put almond essence, in the other vanilla extract. Both improved the taste of the sponge and took the edge of the ground almonds taste. Both cakes got scoffed down quickly, compliments all round.  :star:
