Cheesy apple chops

I do hope I am not repeating myself here!

Anyway we had these tonight and they were delicious.

4 x thin pork loin chops.  (No bone)
half an eating apple
4 slices of cheddar.

Grill the pork loin chops on one side until the fat looks sort of brown.  Whilst you are doing this slice half a cored apple into 8 slices (no need to peel),  saute the apple in a tiny bit of butter in a pan, just until a bit softened.

Turn over the chops and ensure the fat is a bit browned but the chops aren't over-cooked.  Top with the apple slices and the cheddar slices and return to the grill until the cheese is bubbling  before serving.  Really yummy!  Quite low carb, depending on your apple and  how much you use.

We had them with a couple of new potatoes in their skins and a courgette which I had used a veggie peeler on to make thin strips then cooked in butter and lots of black pepper.  Some green beans, some asparagus - really filling.

Ahhh sensible man Dolly!  A different twist is to use Stilton or other blue cheese.
