Shortbread

Christmas is coming and the goose fat is in the fridge.

I have vague memories of my mum making shortbread with ground almonds as part of the mixture.

Anyone have a lowish carb recipe for shortbread ?
Type 2 since 1999. Current meds Gliclazide
HbA1c Feb10 10.9, May10 7.7, Oct10 6.6, Oct11 6.7, Dec12 6.4, Nov13 6.9

It's annoying - mum always used to use a wartime recipe which used a mixture of some flour and some ground rice and I'm sure that recipe could be adapted to incur[orate ground almonds instead.

But of course the battered old handwritten recipe book that started off with HER mother, was slung decades before mum died.

Patti, I couldn't get anything from the first two links!

I'm very surprised Mrs B used 'cups' as measures Terry!

Yes Patti 'we knew that' - my original idea was to find a recipe like mom's with some flour and some ground rice, and try replacing most of the flour and all the ground rice, with ground almonds.  Depending on the other ingredients - she'd have been using 'hard' Stork at the time I remember them as the fat - so if you subbed soft Olive spread or butter for the marg you may not need extra fat.

She also used to bake (in a Swiss roll tin) a coconut slice with an unsweetened shortcake-like base which you rolled out, a THIN layer of jam and the top layer was desecrated (we always called it that LOL) coconut mixed with something which when you ate the oblongs you divided it into after baking was firm but sort of 'bendy' - in the same ruddy book of course .......

Patti, I think the first link doesn't work because it has an extra 'h' at the beginning ie. it reads hhttp. 

The second link has http:// at the end as well as at the beginning.  I clicked on it then removed that bit at the end and it worked.    ;D

Ahhh... yes Pauline, my mouse was playing up yesterday and I must have clicked in between the initial http: thingie that you get when you click on the link button, rather than deleting it.  I put a new battery in it last night and it's fine now.
