Is it safe to cook with olive oil ?

Looks like EVOO is less prone to degradation from heat than some other cooking oils -

P.S. Make sure you read the comments below the article, seems to have stirred up a bit of a hornet's nest.

The comments did confuse things... however, I use olive oil for frying, but never usually fry things for very long.  Even Fillet steak (and hubby likes it blue, whilst I like it rare), I seal in a frying pan and pop into the oven for 10 - 15 mins. Results are perfect.

Exercise - am running on a fairly regular basis - knees don't fail me now :)  and Diet (am a lacto ova vegetarian and am trying to stay low GI/GL)     Still on the Road To Find Out

But you don't cook confit of duck in oil for 24 hours do you Mr Zig?  You cook duck pieces in duck fat and only for about 2.5 to 3 hours.

Well, if it isn't safe I've been unsafe for 12 years.

I use extra virgin olive oil for salads and all my low-temperature cooking, such as omelettes, bacon, sausages, eggs etc.

I use peanut oil or beef fat for high temperature deep frying or high-heat wok stir-frying.
