I have drunk my tea and coffee with sweetener for over 40 years Abi.  I've not noticed any rise in BGs from it.

Well it could be I spose if you had to use as much - but a tiny bit of Sweetex (quarter of a teaspoon if that) is equivalent to 1 teaspoon of sugar - hence you get a lot of 'sweet' in just a little bit, so although it still has carbs - it works out at a lot less carbs than the equivalent 'sweet' of sugar!

Ah, well flour is another matter, of course it will raise BGs.  Have a look in the recipe section, plenty of muffins etc that are very low in carb.  PaulineS just posted a recipe for lemon ones.  Substituting ground almonds for flour works well.  Or have a look at the DSF cookbook here http://www.diabetes-support.org.uk/info/?page_id=175

Any of the cake recipes can be turned into muffins, most of the recipes will make between 6 and 12 muffins dependent on the size of your muffin tins.  You just need to reduce the cooking time to 20 minutes.

Read this first (click on it): Aspartame

As to whether sweeteners raise blood glucose the answer is to try it and test afterwards. I have never had any of the artificial sweeteners raise my blood glucose.

Oh I love lemon (especially lemon drizzle cake ha ha!!) Ill look. Thank you

I have just seen this thread, so thank you Liam for showing Ab1234 where the recipe is.

I made 24 muffins at the beginning of this week. I doubled the amount shown in the recipe, left out the essences, then divided it into two.  To one half I added the citric flavoured essences for lemon muffins and to the other half I added a teaspoon of vanilla essence and 3 teaspoons of almond essence.  The almond ones were equally as delicious.  I also halved the amount of Total Sweet that I used this time, as sweeteners are very expensive to buy.  It didn't seem to affect the recipe.  I made a trifle with some of the muffins, put a few in a tin to eat this week (they don't last as well as normal cakes) and the rest are in the freezer.

Ab1234, if you have animals, especially if you have a dog, please read my warning about Total Sweet in my posting of 2nd February.  http://diabetes-support.org.uk/diabetes_forum/index.php/topic,5749.0.html
