I have just seen this thread, so thank you Liam for showing Ab1234 where the recipe is.
I made 24 muffins at the beginning of this week. I doubled the amount shown in the recipe, left out the essences, then divided it into two. To one half I added the citric flavoured essences for lemon muffins and to the other half I added a teaspoon of vanilla essence and 3 teaspoons of almond essence. The almond ones were equally as delicious. I also halved the amount of Total Sweet that I used this time, as sweeteners are very expensive to buy. It didn't seem to affect the recipe. I made a trifle with some of the muffins, put a few in a tin to eat this week (they don't last as well as normal cakes) and the rest are in the freezer.
