Found it! Chia seed dessert recipe

This is the recipe I used to make chocolate chia pudding (perhaps mousse would be a better word)

Ingredients for chia pudding:

    3 cups unsweetened almond milk
    1/2 cup chia seeds
    1-3 tablespoons of pure maple syrup, (or stevia) to taste


Suggested toppings:

    Cream
    Fresh berry fruit
    Coconut flakes
    Cinnamon
    Nuts and seeds
   

Directions:

    Whisk the almond milk, chia seeds and sweetener together in a large bowl.
    Let sit for 5-10 minutes and then whisk again (this just helps prevent clumping), or blitz in a blender
    Cover and chill in the fridge for 1-3 hours, or overnight.
    Stir well before serving. Portion into bowl(s) and add your desired toppings.
    Leftovers will keep in an air-tight container in the fridge for 3-5 days.

Thanks BBarb ...er di you put cocoa in to make it chocolate flavour or did you use chocolat flavoured almond milk, please? 

I am still waiting for mine to be delivered so haven't tried them yet?

My seeds arrived yesterday afternoon but as we had to go out, I didn't do anything with them.  I will make some up later today and try them for breakfast tomorrow.

I made a large bowl full of the chocolate chia dessert and have had it two days running for breakfast.  According to information on the web, it can help people to lose weight so fingers crossed that it does something for me.  It hasn't raised my bg's very much at all so I am pleased to have another choice for breakfast on my low carb diet.   :D

I've not researched it but I'm always a bit sceptical of the latest 'super food' helping with weight loss. It is bound to be pretty low calorie, since it seems to be most a type of fibre the seeds are mainly composed of. They do have some fat but you seem to use a fairly small amount of seeds and most of the dessert you eat is milk / almond milk.

Chia seed pudding is delicious, but do be careful on how much you eat of it.......not because it has high calories or carbohydrates.  It can cause "digestive" issues for some peeps.  Last week I made the version with chocolate in it - and over-indulged......won't do that again.  :)

It's apparently high in fiber - a sudden increase in fiber intake can cause all sorts of digestive discomfort, well do I know!
