Pee'd of with cranberry sauce
« on: 20 December 2015, 09:48:56 PM »
Like many of you may be, I've been getting pee'd off over cranberry sauce. All the commercial vesions seem to be a bit carby for use over the festive season:arghh:  :banghead:
 Answer, make your own!:nailbiting: 8)
So startedwith a tray of cranberries, burst them in the microwave and added 3 cloves and a sueeze of lemon and the zest of a lemon and stewed them with 4 fl oz water, when tender, i removed the cloves andI blitzed them with a stick blender and sweetenrd the mixture to taste with stevia powder. The resulting puree was like a thin tomato puree in texture and smeared nicely on my gammon & chicken:cool:  :)
The result was so well recieved that I have made another batch but this time with a couple opf chillies to give it a Zing :woot: :o

We're not keen on 'jam' on any meat, anyway.  Saw some red onion chutney in Morrison's the other day and looked at it, but stuck it back since from past experience it can be so sweet it's unbearable!

Bread sauce for me please - with plenty of noticeable onions and enough cloves!

I often do fruit sauces with meat, but usually made by my own fair hand to complement whatever.

I'm going to try this recipe from Mark Sissons in which the cranberries are cooked with some butter ! Then add some spices such as cinnamon and pepper at the end of cooking and some sweetener, but not much - I'll add a bit of xylitol. There's also a recipe there for a Cranberry Relish - bit too 'hot' for me: http://www.marksdailyapple.com/simmered-cranberry-sauce-and-spicy-cranberry-relish/#axzz3uhFFXZFr
