Xmas Panna Cotta

I made some of these last week and they turned out so delicious, I made some more yesterday.

Very quick to make, it's just the time in the fridge to set that seems to drag.

I don't know how long they would keep for in the fridge but mine just seem to vanish in no time at all.
Type 2 since 1999. Current meds Gliclazide
HbA1c Feb10 10.9, May10 7.7, Oct10 6.6, Oct11 6.7, Dec12 6.4, Nov13 6.9

Sounds nice, I may try it....need gelatine or veggie equivalent
T2 and PCOS. Just had large serous adenofibroma removed with ovary and fallopian tube. Bp is now normal!

Novorapid, levemir, trulicity, metformin.

Sounds yummy Terry... when you say Cloves I presume you mean ground cloves not whole ones?

Just thought people might like the recipe in a post rather than downloading it (and for people without word)

Ingredients
---------------
15g sultanas (about 30 bits so 10 or 15 per portion)
2 tablespoons rum (I recommend Captain Morgans Spiced)
1 and a quarter sheets of gelatine (2.4g)
300ml pot of extra thick double cream
(If using ordinary double cream add a quarter sheet more of gelatine)
15g sugar or equivalent in sweetener (I used 5g Truvia sweetener)
A quarter teaspoon each of ground ginger, cinnamon, nutmeg and cloves.

Method
1. Place the sultanas and rum into a small bowl and and leave to steep for an hour or so.
2. Meanwhile, soak the gelatine sheets in some cold water to soften.
3. In a heavy-based pan, warm the double cream, sugar and ground spices. Bring to the boil, then reduce the heat until the mixture is simmering and simmer for 2-3 minutes, whisk gently until the sugar has dissolved.
4. Remove the cream mixture from the heat, drain and sqeeze the gelatine to remove any excess water and stir into the cream mixture for a minute until dissolved. Tip the fruity rum infusion into the cream mixture and stir round.
5. Spoon the mixture equally into two or three suitably sized moulds or ramekins, ensuring an even distribution of fruit. Set aside to cool for a while then cover with cling film to reduce skin formation and chill in the fridge for a couple of hours until set.
6. To serve on a plate, dip the moulds or ramekins briefly into warm water to loosen each panna cotta.  Or you can just eat them as they are.


Carb count for 3 smaller portions
6g per portion plus your sugar or sweetener. I used 5g Truvia total so about 7.5g carbs per portion.

Carb count for 2 larger portions
9g per portion plus your sugar or sweetener.

Ramipril: 10mg Quetiapine: 550mg Metformin: 2000mg

Thanks Liam for doing that.  I meant to do it earlier today, but had a very busy day, mostly on a 4 hour wild goose chase!

All the spices are ground, the finer the better as they do sink and give a muddy topping (if you turn them out rather than eating direct)
