Stracciatella Cake

Came across this recently and have made it twice - simply delicious with cream!!

Stracciatella Cake

110 g butter, softened
120 g cream cheese
5 eggs, medium size
185 g almond flour
sweetener equivalent to 100g sugar (I used 4 oz of xyitrol )
1 tbsp baking powder
almond essence/orange essence/vanilla essence (I used vanilla extract )
50 g of 85% chocolate

Preheat oven to 170 ° C.
Mix butter and cream cheese really well
Add sweetener and essence of your choice and stir again
Add the eggs one at a time, mixing well after each addition
Stir in almond flour and baking powder
Chop chocolate into small pieces and add to the mixture
Line and grease a small loaf tin or use a silicon baking dish
Pour in the cake mixture, level out the top
Bake for 55 minutes at 170 ° C in a fan assisted oven (would be 180 in a normal oven I think)

Will have to try that sometime soon. Did the recipe have a carb count?  Or number of servings so we could work it out?  I appreciate that it's low carb, but us T1s need to know the carb count so we can dose for it  :)

I can work out the total carbs, but until I saw it made I'd not be able to estimate portions.  Might have a go at it this weekend if I have any time.

I made in 8" Silicone round tin actually so must have thought the loaf tin way too small at time...umm oops sorry didn't realise this was working out an issue lol

It's not really an issue! You copied the recipe you had, THEY didn't give a carb count, and you didn't need one so of course you wouldn't have worked all that out.

Totally not your fault, but would be nice if sites with low-carb recipes like that one realized that at least some people looking for "low-carb" food actually do need an exact count. If anything, should have been the original website that thought to do one!

Sorry if I gave the impression that it was a big issue, it's not really.  It just makes me cross that the site you got it from hadn't the nouse to say number of servings. I just worked out the whole recipe and by my reckoning (assuming using 16g granulated splenda = 3/4 cup) the whole recipe is 41.8g carb, so it would be low carb if you ate even 1/8 of it, which would be 5.2g carb.

I come across far too many so called "low carb" sites that are sloppy and don't give portions or carb counts. I asked in the first place because it was easier if you had the answer PMS, than to open my "cook and count" app and feed it in.  Also since I'd not seen it I didn't know how many portions it made.
