A simple meal
« on: 13 March 2017, 10:21:38 PM »
Had 3 pork loin boneless chops from the freezer and not much in the way of veg in the fridge.  So using up odds and ends.  I had a bag of kale, which I sauteed in coconut oil, then popped into an oven proof dish, topped it with a heel of goat's cheese log from Lidl and popped it in the oven until the cheese melted.  2 x about 1/3 punnets of various mushrooms that deffo needed using up.  A lump of butter that I had combined with chopped up Basil for a recipe some while ago.  Sauteed the mushrooms in the Basil butter after wiping out the kale pan with a piece of kitchen roll.  Cooked the pork in the oven until fat was crispy and warmed the bit of home made onion marmalade left in a jar in the fridge to top the chops with.  It was a surprisingly lovely dinner!

We had a Tesco delivery yesterday and I noticed when ordering it that their own label butter had gone up 10p.

The pound has fallen once more against the Euro due to the Brexit bill, so this is bound to affect food costs.   >:(
