Spicy Lentils (would suit vegetarians)

We eat this as a side dish for sausages, but it would make a tasty and filling main course for Vegetarians

Serves 3 (multiply as necessary)

150g green or Puy Lentils
3 large or 4 medium carrots peeled and chopped
1 large onion sliced ( or 6 - 8 shallots cut in half)
3 or 4 celery stalks sliced
1 Leek washed and sliced
1.5 to 2 pints veggie stock
2 tbs olive oil or suitable veggie oil
1 x large red chilli chopped inc seeds
4 garlic cloves crushed and chopped
a large piece of fresh ginger peeled and finely chopped (about 1 man's thumb size)
Quartered mushrooms (optional)
Small bunch fresh Coriander

Put all the veggies,  ginger, chilli and garlic into a heavy based saucepan and fry in the oil until softened and a bit caramellised.  Rinse the lentils and add to the pan, fry for 1 min before adding 1pt of the veggie stock.  Bring to the boil, cover and simmer over a medium heat until the lentils have softened.  Add stock as necessary.  When the lentils are soft, stir with the pan lid off and reduce the cooking stock to an unctuous thick gravy.  Serve with freshly chopped Coriander.
