Autumnal Tomato Soup

This is a variation on the more familiar homemade tomato soup. You will need the following ingredients:

1 kg ripe tomatoes
4 medium sized cooking apples
Large orange
Tablespoon virgin olive oil
500 ml water
Pinch of sea salt
Dash of black pepper
Additional seasonings of choice, e.g. coriander, basil.

Halve the tomatoes and put into a large saucepan. Quarter the apples and remove the core/pips. Add then to the pan and grate the zest of the orange over them. Halve the orange, remove the pips and add to the pan. Add the olive oil, seasoning and water. Put on a tight fitting lid and bring to the boil. Simmer for 30 minutes.

Transfer to a blender and fully liquidise. Taste and add additional seasoning to suit. Some people find it slightly sharp and add a spoon or two of brown sugar or use another sweetener. Reheat and serve with a chunk of artisan bread and cheese of choice (strong cheddar recommended). Not sure how many vitamins survive!  :)

Hi Andy

It sounds wonderful but do you have a carb count for this recipe?  How many does it serve?  I started to do a carb count for it and got 1kg tomatoes 32g but I have no idea what 4 medium cooking apples weigh, and the orange will have a huge input.  Beware of the brown sugar too!

I was just thinking I'd like to make it and have it for lunch but how do we match carbs to insulin without any knowledge?  Some recipes do give a carb count and number of servings.  I'd deffo not have the bread!

How many does it feed though?  500ml is '2 portions' then all the fruit liqidises so it must be a good bowlful for 4 people in the finish, mustn't it? so may not be all that bad.

I hate to say this, but could also be rather acidic?  keep off it in the case of arthritis or acid reflux?  LOL

gosh I'd really love to make this.... I wonder if theres a way to reduce the carb count.
T2 and PCOS. Just had large serous adenofibroma removed with ovary and fallopian tube. Bp is now normal!

Novorapid, levemir, tibolone, estrogel.

I reckon that the recipe as it stands (including sugar) would be in the region of 100 - 110 grams of carbs. So a quarter of that as a portion is a bit too much for me.

If I were to make it, I would just use one eating apple and add some celeriac, only use half an orange and skip the sugar. This would roughly halve the carbs.
