According to Wikipedia: from the close relationship with Italy, pasta and polenta are traditional, as are a variety of spices (Savoie having once had the monopoly on east-west trade across the Alps). Lots of dishes based around potatoes and cheese, as well as nuts and dried fruits (raisins, apricots, etc.)
Can attest to the potatoes and cheese; we had tartiflette at a local restaurant and it was to die for! Similar to potatoes au gratin but there was bacon involved and they use a whole round of reblochon cheese, cut in half and placed cut-side down over the top of the dish so it melts and your dish is topped with the rind. Well worth the bolus! They also had a fantastic pesto, walnut and goat cheese pizza.
