I've never baked with mine, just used it in my psyllium/nuts/muesli mix. That has never changed colour regardless of storage time.
I'm surprised you can't buy it in your supermarkets or a health food store. Do you have those?
Hi Alan - we can buy psyllium husks seeds in health food shops, but I've never seen psyllium husk powder there which is what you need for cooking with. Also in health food shops they charge a lot for psyllium. Very many years ago, I mean nearly 40 years ago, I used to buy psyllium husks/seeds from Indian grocers as it's a well known Indian product to settle tummy problems.
