Hi everyone, Hope someone can help me understand my blood readings. For the last 2-3 weeks I have cut out a lot of carbs, living on omelettes, salads and dinner with meat and veg but no potatoes. I have also cut out all bread, cakes, biscuits etc and my reading hovered about 7. Now today being Mother's Day my daughter invited us to a late lunch and I had prawn cocktail with a crusty bread roll, followed by roast beef, one roast potato and one Yorkshire pudding plus cabbage, cauliflower, asparagus, carrots followed by raspberry sundae with ice cream and whipped cream. Tested my blood expecting it to high at about 12 or something and was shocked to find it was 5.7. Don't understand why it was so low when I had eaten more. Hope someone out there can enlighten me. Thanks.
